Baked Chicken and Rice

Ingredients

  • 1 Whole Chicken
  • 4 Cups Instant Rice White or Brown
  • 4 Stalks Celery
  • 1 Whole Yellow Onion
  • 1 Package Baby Bella Mushrooms Whole
  • ½ Cup Oil Avocado or Olive
  • ½ Cup Flour
  • 1 Quart Half and Half
  • 1 Cup Milk
  • Salt
  • Pepper

Instructions

Prep Your Veggies

  • Dice onion, celery, and mushroom into small cube size pieces (roughly 1/2 inch size)
  • In a pan heat oil
  • Add onions, celery, and mushrooms to the pan
  • Salt and pepper veggies and cook until onions are translucent

Build Your Sauce

  • Spoon flour and sprinkle to coat your veggies
  • Create a roux with flour and oil in the veggies
  • You should have a pasty consistency with the veggies
  • Add cream and stir consistently until your sauce thickens
  • Add salt and pepper to taste
  • Remove from heat and set aside

Butcher Your Chicken

  • With a sharp knife, quarter the chicken by cutting down the separation line of the chest cavity and the thigh/leg
  • Find the joint between the thigh and drumstick and press hard on your knife, separating the leg and thigh into separate pieces
  • Find the wing piece and with a sharp knife separate the wing and chest cavity
  • Run your knife under the breast bone and separate the breast and back piece
  • Set a side pieces for your dish

Assemble Your Dish

  • Pre-Heat oven to 425F
  • Grease 9x13 pan
  • Add rice and spread evenly
  • Stir in veggie sauce mixture
  • Add milk to thin sauce if necessary. Looking for a thin soup consistency
  • Evenly place your pieces throughout the rice slurry
  • Salt and pepper surface and place oven
  • Bake for 45-50 Minutes until chicken is cooked through
  • Serve with your favorite side and enjoy
