Ingredients

Hamburger Seasoning

  • 3 Tbsp Hamburger Seasoning

Casserole Mixture

  • 2 Tbsp Avocado Oil
  • 1 lb Ground Beef
  • ¼ Cup Dill Pickle Slices
  • 2 Cup Shredded Cheese Reserve 1 cup
  • ½ Red Onion Diced
  • ½ Cup Cottage Cheese
  • 1 Egg
  • ½ Bag Frozen Shredded Hash Browns
  • 1 Head Romaine Lettuce
  • 2 Cups Cherry Tomato Sliced

Sauce Ingredients

  • ½ Cup Ketchup
  • ½ Cup Mayo
  • ¼ Cup Mustard
  • ¼ Cup Hamburger Slices

Instructions

Casserole Base

  • Pre-heat oven to 425F
  • Grease a 9x13 baking dish
  • Pour hash browns into greased pan and spread across the base of the pan
  • In a heated skillet, brown ground beef and season with hamburger seasoning
  • Drain browned hamburger and add to to hash browns
  • Dice pickles and onions to a small dice and add to hash browns
  • Add 1 cup of cheese and set 2nd cup aside for later
  • Using a spoon, mix hash browns, onions, and pickles together and spread evenly through the pan
  • In a separate bowl, beat egg and cottage cheese together and pour over hash brown mixture
  • Bake at 425F for 25 minutes
  • Remove pan and sprinkle remaining cheese on hash brown mixture and bake for 5 minutes to melt cheese

Topppings

  • While casserole is baking, chop lettuce and tomatoes with a rough chop

Sauce Mixture

  • In a small mixing bowl add ketchup, mayo, mustard
  • Chop pickles to a rough chop and add to condiments bowl
  • Mix condiments and pickles together

Finishing Your Casserole

  • Remove from oven when potato edges are browning and cheese is melted
  • Let cool slightly
  • Sprinkle lettuce and tomato mixture
  • Drizzle sauce mixture around the top of the lettuce
  • Keep extra sauce for individual pieces if people would like more on their share and enjoy
