Cheeseburger Meatloaf

This cheeseburger meatloaf dish is a blend of two American classics. The merging of a cheeseburger with that of a traditional meatloaf, sure to be great.

Equipment

  • 1 Mixing Bowl
  • 1 Loaf Pan

Ingredients

  • 1 lb Ground Beef 85/15 is best
  • 1 Egg
  • 1 Cup Shredded Cheese Cheddar, Swiss, or Monterey Jack
  • 1 Cup Italian Breadcrumbs
  • 1 Cup Dill Pickles Small Dice
  • 1 Yellow Onion Small Dice
  • 1 Tbsp Sea Salt
  • 1 Tbsp Black Pepper
  • 1 lb Bacon Split into half pound groups
  • 1 Cup Ketchup
  • ½ Cup Yellow Mustard
  • ½ Cup Mayonnaise

Instructions

Pre-Heat Oven

  • Set oven to 425F

Bacon and Onion Mixture

  • Set aside 1/2 lb. of bacon and dice remaining bacon into small diced pieces
  • Dice yellow onion into small pieces
  • Sauté bacon and onion together in a frying pan until bacon is crisp and onion is translucent.

Meatloaf Mixture

  • In a mixing bowl, add ground beef, egg, bread crumbs, salt, pepper, and shredded cheese
  • Add bacon and onion mixture
  • Mix completely using your hands

Prep the loaf pan

  • In a loaf pan layer remaining bacon strips alternating sides
  • Lay each piece of bacon with one end across the bottom of the pan and other end hanging out the side of the pan
  • Pour meat mixture into loaf pan, patting it down tightly into loaf pan.
  • Wrap top half of mixture with bacon hanging outside the pan, laying strips across the top of the mixture

Create Sauce Mixture

  • Add ketchup, mustard, mayo to a small mixing bowl
  • Dice and dump 1/2 cup of pickles into sauce mixture
  • Mix completely until an orange consistency

Bake the meatloaf

  • Place the pan in the oven and bake for 45 minutes
  • Remove the meatloaf after 45 minutes and remove from loaf pan and place on a baking sheet
  • Coat loaf with sauce and place back in the oven for 10 minutes
  • Remove from oven and serve with sides
