With a knife, thinly slice chicken breasts into small thin slices
In a mixing bowl, mix your seasoning with the sliced chicken breasts
Wash your cutting board and knife and slice the peppers and onions into thin slices
Heat your flat top grill to medium-high heat.
On your flat top, add chicken and cook until cooked through completely and set aside.
Cook onions and peppers, generously salt and pepper veggies as they cook.
When peppers are cooked and onions are semi-translucent, mix chicken and veggies together.
Separate mixture into four sections
Add 2 slices of pepper jack cheese to each section of meat and veggies.
Steam to allow cheese to melt.
While cheese is melting, slice rolls with a breadknife length wise.
Place rolls cut side down and toast.
When the bread is toasted spoon meat, veggies and cheese into buns
Leave on the grill to toast outside of the bun as an open face sandwich.
Remove from grill and serve
