Slice your onions and peppers into think julienne slices
Slice your chicken into thin slices.
Put sliced chicken into a plastic sealable bag
Add fajita seasoning to the bag, seal, and massage the chicken breast
Let the meat marinade or prepare the griddle
Heat your griddle to medium - high heat
Sear the chicken and cook the vegetables on the griddle.
While your chicken is cooking, add your rice to hot water and cook
Spoon your cooked rice mixture in a bowl
Spoon your cooked chicken and onions and peppers over the rice bed
Serve with a lime wedge, side of sour cream, or corn tortillas.
Top with shredded cheese, sour cream, or tortilla chip crumbles and salsa.
