Ingredients

  • 4 Chicken Breasts
  • 2 Bell Peppers
  • 2 Onions
  • ½ Cup Fajita Seasoning
  • 4 Cups Cooked Rice
  • Shredded Cheese Optional
  • Sour Cream Optional
  • Salsa Optional

Instructions

  • Slice your onions and peppers into think julienne slices
  • Slice your chicken into thin slices.
  • Put sliced chicken into a plastic sealable bag
  • Add fajita seasoning to the bag, seal, and massage the chicken breast
  • Let the meat marinade or prepare the griddle
  • Heat your griddle to medium - high heat
  • Sear the chicken and cook the vegetables on the griddle.
  • While your chicken is cooking, add your rice to hot water and cook
  • Spoon your cooked rice mixture in a bowl
  • Spoon your cooked chicken and onions and peppers over the rice bed
  • Serve with a lime wedge, side of sour cream, or corn tortillas.
  • Top with shredded cheese, sour cream, or tortilla chip crumbles and salsa.
