Equipment

  • 1 Meat Tenderizer Mallet
  • 1 Shallow Frying Pan
  • 1 Shallow Plate

Ingredients

  • 4 American Pork Chops 1-1/2 Inch Thick Cut
  • 2 Cups Corn Starch
  • 1 Tbsp Sea Salt
  • 2 tsp Ground Black Pepper
  • 2 tsp Smoked Paprika
  • 2 Cups Frying Oil Coconut, Avocado
  • Dill Pickle Chips

Instructions

Prepare the Breading

  • On a shallow plate dump corn starch, salt, pepper, and paprika
  • Stir together with a fork to mix completely

Prepare the tenderloin

  • Place a pork chop under a sheet of parchment or plastic wrap.
  • Using a tenderizing mallet, pound out the pork chop until it reaches a thickness of about 1/4 to 1/2 inch thick
  • Season both sides of the tenderized pork tenderloin with salt and pepper.
  • Coat both sides of the loin with the cornstarch mixture and set aside ready to cook.

Fry the pork tenderloin

  • Pour the oil into your pan and heat until you see swirls in your oil
  • Sprinkle cornstarch into pan to assure your oil has reached an appropriate temp (350F)
  • Place the breaded pork loin into the oil laying it gently into the pan to avoid splashing
  • Cook on each side 5 to 7 minutes, flipping only once to allow meat to cook through.

Assemble the sandwich

  • Remove pork tenderloin from the hot oil and salt immediately
  • Place tenderloin on a cooling rack to allow to drain completely
  • Cut bun in half, spread top half with mustard and place pork tenderloin on bottom half
  • Place dill pickle slices on the tenderloin and place on the top half of the bun
  • Enjoy with your favorite side dishes.
