Smashed Potatoes

Give your favorite side dish a makeover with these smashed potatoes. Creamy interior surrounded by a crisp and flavorful exterior, these potatoes are sure to be a Fam favorite at any meal.

Equipment

  • 1 5 Quart Pot
  • 1 Sheet Pan
  • 1 Cutting Board/Skillet Something with a flat surface to smash potatoes

Ingredients

  • 10-15 Creamer Potatoes Red and Yellow Work Best
  • 1 Cup Parmesan Cheese
  • 1 Cup Shredded Cheese Cheddar or Colby Jack
  • ½ lb Bacon Crumbled
  • ¼ Cup Olive Oil
  • Salt
  • Pepper

Instructions

Prep The Potatoes

  • Remove potatoes from bag and wash
  • Add to a pot of COLD salted water
  • Set your pot on a burner at medium-high heat and parboil until fork tender
  • Once fork tender drain your potatoes, but don't rinse

Smash Your Potatoes

  • On a sheet pan dump your drained potatoes
  • Using a cutting board or another pan, smash your potatoes to a consistent 1/2" thickness
  • Drizzle with olive oil, season with salt and pepper
  • Generously shake parmesan cheese and shredded cheese over the top of your potatoes
  • Crumble bacon and top the cheese and potatoes
  • Bake in an oven at 425F for 20 minutes until cheese is melted and crisp
  • Serve with your favorite main dish.
