On a sheet pan dump your drained potatoes
Using a cutting board or another pan, smash your potatoes to a consistent 1/2" thickness
Drizzle with olive oil, season with salt and pepper
Generously shake parmesan cheese and shredded cheese over the top of your potatoes
Crumble bacon and top the cheese and potatoes
Bake in an oven at 425F for 20 minutes until cheese is melted and crisp
Serve with your favorite main dish.
