Ingredients

  • 3 Blocks Cream Cheese
  • 2 Cups Shredded Chicken
  • 2 Cups Shredded Pepper Jack Cheese
  • 1 Cup Buffalo Sauce
  • 3 Tbsp Science Lab Rib Rub
  • Crackers or Tortilla Chips

Instructions

  • Pre-heat pellet grill to 225F
  • Unwrap and place blocks of cream cheese in oven safe dish. Make sure blocks don't touch.
  • Spread rub to coat blocks evenly
  • Place dish on smoker and smoke cream cheese for 45 minutes until white cream cheese becomes discolored from smoke
  • Remove pan from grill and mix in chicken, 1 cup of cheese, and buffalo sauce
  • Increase heat of pellet grill to 350F
  • Spread softened cheese mixture to cover dish. Sprinkle remaining cheese to cover the softened cream cheese.
  • Place dish back onto grill and bake for 15-20 minutes until melted cheese is golden brown.
  • Serve with crackers, chips, and sliced vegetables.
