Remove pork loin from packaging and rinse and pat dry
Cover loin with binder, preferably yellow mustard
Coat with your favorite pork rub
Place on smoker at 180F
Smoke until interior temp reaches 90F
Increase grill temp to 250F and cook until internal temp reaches 145F
Remove from grill and allow loin to rest for 15 minutes
Slice thinly and serve on buns or slice thick as the main protein of your meal
